Sweet Potato Casserole

Oven Temp: 375 degrees

Cook time:  18-20 minutes

INGREDIENTS

Sweet Potato Mash:

  • 5 large sweet potatoes

  • 1 tsp vanilla extract

  • 3/4 tsp cinnamon

  • 1/8 tsp nutmeg

  • 3/4 tsp sea salt

  • 1/4 almond milk

Topping:

  • 1 C oats

  • 1 C pecans or walnuts

  • 1/4 C almond meal

  • 1 tsp cinnamon

  • 1/4 tsp sea salt

  • 1/4 C maple syrup

INSTRUCTIONS

  1. Roast sweet potatoes at 400 F until fork tender.

  2. Let potatoes cool and then peel.

  3. Mash potatoes and add the potato mash ingredients.

  4. Use a large casserole dish and spoon the mash into the dish.

  5. Prepare the topping by coarsely pulsing the oats(not too much).

  6. Chop the nuts and combine all the topping ingredients, mix well.

  7. Sprinkle the topping over sweet potatoes.

  8. Bake at 375 F for 18 - 20 minutes.
